A Homebrew Beer Recipe

Style (BJCP): 
19E. Belgian And French Ale - Belgian Specialty Ale
Extract Ingredients: 
  • 6.6lbs Bavarian Wheat LME
  • 1 lb 6 Row
  • 1.25 lb Belgian Pils
  • .5 lb Carawheat
  • .5lb Midnight Wheat
  • .25 oz Northern Brewer Hops @ 60 min
  • .25 oz Crystal, Saaz, or Hallertauer @ 20
  • Yeast: Imperial Gnome, Safale S-33, or Wyeast 3522
Extract Instructions: 
  1. Bag all cracked whole grains. 
  2. Steep cracked grains in 4 qts water at 153 F for 30 minutes
  3. Rinse grains with 4 qts 170F water and top off boil pot to 6 gal
  4. Bring to boil
  5. Remove from heat, stir in 6.6 lbs Bavarian Wheat LME, resume boil
  6. Add hops at 60 min and 20 min
  7. Add yeast nutrient and clarifying agents as desired
  8. After 1 hr of boil, cool to 70F
  9. Transfer to fermenter, pitch yeast and aerate
  10. Let ferment for 2 weeks around 70F, moving to secondary after FG of 1.013 is reached.
  11. Cold crash if possible
  12. Package in bottles or kegs
All Grain Ingredients: 
  • Replace Wheat LME with 8lbs White Wheat Malt, add .25lb of Rice Hulls
All Grain Instructions: 
  1. Heat 4.25 gal strike water to 165F
  2. Stir grains in well, making sure to limit dough balls
  3. Mash at 152F for 30 min
  4. add 1 gall boiling water to raise mash temp to 158 for 20 min
  5. add 1.5 gal boiling water to raise mash temp to 168
  6. batch sparge until hot liquor starts clarifying
  7. sparge with 170F water until 6 gallons is reached
  8. proceed with extract schedule
