Raspberry Wheat

A Homebrew Beer Recipe

Style (BJCP): 
17A. Wheat Beer - Bavarian Weizen
Extract Ingredients: 

3.3 lb Wheat Liquid Malt Extract (LME)
1 lb Light Dry Malt Extract (DME)
1 lb Malted Wheat
1.0 lb Pilsner Malt

0.75 oz Williamette hops at 60 minutes
1 oz Fuggle at 30 minutes

Wyeast American Wheat

1/4 tsp Irish Moss at 15 minutes (optional for clearer beer)
5 oz Raspberry Extract (in secondary)

Extract Instructions: 

Heat 2-3 gal H20 to 160F. Steep grains for 30 minutes and remove. Bring to boil. Set 60 minute timer. At 60 minutes (beginning of boil), add DME and Willamette hops. At 30 minutes, add Fuggle hops and wheat LME. At 15 minutes, add irish moss.
At end of boil, cool and pour into fermenter. Add clean H2O to reach 5 gallons. With wort at about 70F, pitch yeast. After fermentation subsides, rack into secondary and add rasberry extract. Let clear 2 days (unless still fermenting, then wait). Bottle/keg and enjoy!

All Grain Ingredients: 

4 lbs Wheat Malt
2 lbs 2 Row
1.5 lbs Pilsner Malt

0.75 oz Williamette at 60 minutes
1 oz Fuggles at 30 minutes

5 oz Raspberry Extract (in secondary)

All Grain Instructions: 

Mash with 1.5 quarts of H20 for every 1 # of grain. Mash at 152 degrees. Sparge to get 6-6.5 gallons.
Boil 60 minutes, add hops as above. Chill to 65 degrees, pitch yeast. (We assume 68% mash efficiency.)
