There is nothing quite like freshly made cheese. Cheeses such as Queso Blanco, Paneer, or Ricotta are a very easy introduction to homemade cheese. These cheeses don't actually require fermentation, and so the preparation is quick and foolproof.
We recently made some Queso Blanco with a kit from Urban Cheesecraft.
The whole process is quite simple; heat some milk to steaming hot, add lemon juice or citirc acid, and then strain and press the resulting curds in a cheese cloth. Let it sit for a couple hours and--bam--fresh, delicious cheese.
