Extract Ingredients: 

3.3 lbs. golden light liquid malt extract
8 oz. cane sugar
8 oz. caramel malt 80L (lighter) or 120L (darker)
4 oz. dextrine malt (carapils™)
1 tsp. Irish moss
0.75 oz fuggles pellet hops (5% AA hop)
Wyeast 1028 (London Ale) or 1098 (British Ale)

Extract Instructions: 

Steep grains 150-180 degrees for 15-20 minutes then remove from heat.
Add malt, sugar, bittering hops, boil for 30 minutes
Add Irish moss boil another 15 minutes.
Cool wort to 70-80 degrees before pitching yeast.
Ferment 10 days at 67-70 degrees, in secondary 35 days at 35 degrees (if possible, or 1-2 weeks at cellar temp).

All Grain Ingredients: 

5 lb 4 oz 2-row Malt
8 oz. cane sugar
8 oz. caramel malt 80L (lighter) or 120L (darker)
4 oz. carapils malt
1 tsp. Irish moss
0.75 oz fuggles pellet hops (5% AA hop)
Wyeast 1028 (London Ale) or 1098 (British Ale)

All Grain Instructions: 

Mash grains at 156 F and hold for 60 minutes. Sparge with 170 F water. Collect enough runoff to end up with 5 gallons after a 60-minute boil (approximately 6.4 gallons). Bring to boil, add the bittering hops. Boil for 60 minutes. Add irish moss 15 minutes before end of boil. Cool wort to 70-80 degrees before pitching yeast. Ferment 10 days at 67-70 degrees, in secondary 35 days at 35 degrees (if possible, or 1-2 weeks at cellar temp).
